The reason you won't see pets grow (at least in size) is to avoid the confusion of the silhouettes of enemies on the screen. If you keep them small it's easier to determine which is yours. Now if they could be customized or evolve to look different, then there could be room for growth. That'd be neat. 1.
It is, but logically WvW is a subset of PvE (same gear, food, npc enemies, vistas, etc. etc.) so you don't get all the pets unlocked like sPvP. Also the reason you have to tame wolves themselves in WvW.
